There exists a particular alchemy in taking something conceived for the screen and rendering it tangible, something you can hold in your hands and experience with your senses rather than through the glow of a display. This autumn, Carnistore orchestrates precisely this act of materialisation, translating its most celebrated digital creations into dishes that demand to be tasted at What The Food 2026.
The homegrown premium protein brand, established in the UAE in 2018, has cultivated a devoted following through its Dan x Fix Dream Series, a collection of boldly conceived culinary visions that have garnered millions of views across social platforms. These were never mere exercises in visual excess; they represent the brand’s philosophy of uncompromising generosity with ingredients and technique. Now, for the first time, two of these creations venture beyond the digital realm into the festival’s physical space at Alserkal Avenue.
Where Indulgence Finds Expression
The Dream Carni Philly Cheesesteak embodies everything the classical American sandwich aspires to be, elevated considerably beyond convention. Multiple cuts of beef converge with caramelised onions that have surrendered to slow heat, whilst homemade cheese and a silken cheese sauce unite within a toasted roll, its surface finished to a burnished crispness. It is, unequivocally, a sandwich for those who understand that restraint has no place at certain tables.
Accompanying this is the Dream Lasagna, a composition of considerable architectural ambition. Successive layers of rich ragù alternate with slow cooked pulled meat, whilst cold cuts and creamy ricotta introduce textural counterpoint. The layers are bound together with a bone marrow béchamel of uncommon decadence, whilst nduja and chorizo contribute warmth and piquancy. This is comfort food reimagined for those who reject the notion of excess, who instead embrace abundance as a form of expression.
Gathering Around Good Food
The festival’s Khubz wa Milh theme, which translates to Bread and Salt, celebrates the connections forged around the communal act of eating. Carnistore’s participation speaks to this philosophy with eloquent directness. These are dishes conceived for sharing, for passing between hands, for generating conversation and memory rather than merely satiety. The activation returns to What The Food following a previous edition where the brand presented its Shawermoo concept, demonstrating a consistent commitment to bringing its most inventive work directly to the discerning palates of Dubai’s food community.
Carnistore’s trajectory since its 2018 founding reveals a brand that has fundamentally reshaped how premium proteins are sourced and experienced across the region. Built upon traditional nose to tail principles, the brand has earned the confidence of both refined households and several of the UAE’s most respected hospitality establishments, all through an unwavering commitment to transparency and craft.
Carnistore will occupy a dedicated booth positioned directly outside its Alserkal Avenue store throughout the festival’s duration on 31 October and 1 November, serving both Dream creations. These are dishes that merit one’s undivided attention.
