A glass of wine at Avatara's RE:AVATARA experience, showcasing the beverage's colour and character against the restaurant's refined interior

The philosophy that animates Avatara extends beyond the kitchen and into the glass. Ingredients are reimagined, familiar flavours emerge in unexpected forms, and traditional Indian cuisine continues its conversation with the contemporary. Now that same spirit of metamorphosis has found expression through RE:AVATARA, a new wine and beverage experience that invites guests to reconsider what they pour and how they drink it.

The concept takes its anchor in a single idea: reincarnation. What was once forgotten or overlooked is given new purpose; ancient techniques find relevance through modern hands; ingredients transform into something entirely unfamiliar yet rooted in their origins. Rather than existing merely as accompaniment to the food, each beverage becomes a chapter in the journey, each glass a story waiting to be discovered.

The experience begins with the immediately recognisable, then gently shifts perspective. Cucumber, that symbol of cooling freshness, emerges transformed through gin and basil into something aromatic and contemporary. Chai, woven so deeply into Indian tradition, returns as a cold tea inspired by Kathiyawadi style, retaining its warmth and spice whilst becoming entirely new.

Bottles of Transformation

The wine selection follows this same philosophy of revival and evolution. Lingua Franca Pinot Noir carries the spirit of Burgundy into Oregon’s Willamette Valley, where Old World winemaking meets new American expression. Catena Zapata Malbec tells the story of a grape that travelled from France to Argentina, finding a new home in Mendoza’s high altitude vineyards, where intense sunlight and cool mountain nights transformed it into something unmistakably its own.

Perhaps the most literal expression of RE:AVATARA is The Dead Arm Shiraz. Named after a natural vine disease that leaves one arm lifeless whilst the surviving arm concentrates its energy into fewer, more intense grapes, the wine embodies the very idea of transformation through adversity and focus.

Across the wine list, this philosophy persists: indigenous grape varieties once overlooked; traditional winemaking methods revived by contemporary producers; historic wine styles brought back into focus; ancient techniques interpreted through modern lens. Each bottle has been selected not simply for what it tastes like, but for what it represents. Each carries provenance, each tells of rebirth.

Together, the wines and beverages form another dimension of the Avatara experience. They are designed to complement the food, to awaken the senses, and to encourage discovery with every course and every glass. At its heart, RE:AVATARA is a journey through transformation where the past is never abandoned, but given the opportunity to become something new.
