Mariposa occupies the 29th floor of Fairmont Ambassador Seoul, its design inspired by the silhouette of a butterfly, and in autumn the spell of the room deepens. Purple toned walls frame window side tables where Seoul’s geography unfolds: the Han River, Yeouido Park, the city beyond. The light changes through service, amber giving way to deeper tones as evening settles across the water. This is the natural rhythm of the season reflected in the room itself.

Executive Chef André Lee, a Gold Prize recipient at the 2010 Wine & Gourmet Asia Young Chef Competition, constructs his autumn course with precision and restraint. Fresh squid arrives at the table with the season’s first chill still clinging to it. Triploid oysters, their sweetness amplified by the shift in water temperature, sit alongside chestnuts and pears, each element timed to the moment when autumn declares itself. The five courses unfold not as spectacle but as conversation, each dish building on what came before, the storytelling beginning with an amuse bouche conceptualized around the life cycle of a butterfly, the design motif that anchors the restaurant.

The approach merges contemporary European cooking through a Korean lens, incorporating ingredients sourced from selected Korean farms and seafood from Seoul’s Noryangjin Fish Market. This is not nostalgia dressed in French technique, but rather a recognition that luxury dining finds its truest expression when it honours where it stands. The kitchen works within the season’s constraints and possibilities, allowing them to shape the menu rather than resist them.

After the final course, the transition to Yeouido Park is natural. The restaurant’s location rewards those who linger, who understand that dining of this calibre asks you to slow down and move through the evening as it moves through you.
