Mila receives Michelin Bib Gourmand recognition for contemporary Levantine dining

Warm flatbreads emerge from a wood fired oven, their steam rising beneath hanging copper lanterns as the evening settles over Lusail Marina. At Mila, within Rosewood Hotel on the first floor, the generosity of Levantine hospitality unfolds through sharing plates such as courgetti wafer with feta alongside freshly baked breads served warm with hummus. Chef Marc Mahfouz explores how familiar dishes can evolve while remaining rooted in the memories, flavors and traditions that shaped them, drawing inspiration throughout from his parents’ recipes.

The restaurant’s design invites unhurried appreciation. Rosewood Doha’s desert light and coral reef inspired design come to life, whilst Mila has its own individually curated wine cellar and drinks program, with touches like handmade glassware. Every element harmonises toward the same quiet intention: slowing the pace, deepening the experience.

A harmonious blend of Mediterranean and Levantine sharing dishes, the menu captures both simplicity and sophistication. Highlights include lobster linguini in bisque with cherry tomato, olive oil and smoked paprika topped with chargrilled Canadian lobster, alongside portobello mushroom with fermented lavender honey served over whipped tahini. The lamb shank kibbeh is among the most personal dishes, an interpretation of the chef’s mother’s recipe that preserves the memory and identity of the original whilst expressing it in a contemporary way.
