The kitchen at ROYD in Phuket Old Town will hold something decidedly rare this November: a meeting of culinary temperaments built on genuine regard and a touch of friendly provocation. Chef Phanuphol Bulsuwan, known as Black, and his partner Anothai Pichaiyuth, called Beer, arrive from Chiang Mai’s Blackitch Artisan Kitchen for a single evening on November 20th to cook alongside the team that has spent the past year perfecting the rhythms of Southern Thai cooking.

The exchange carries weight because it runs both directions. Last October, the ROYD kitchen journeyed north to Chiang Mai, where they cooked in Blackitch’s space, moved through the process of disagreement over ingredients, and emerged with a dinner neither kitchen could have conceived alone. Now the favour returns. Black and Beer bring with them the deliberate patience of the North: jars of house made ferments, carefully aged soy sauce, fish sauce and vinegar accumulated through years of small adjustments. Their ingredients come from corners of Thailand most kitchens never reach.

ROYD counters with what the Southern coast offers: the herbs that grow with particular intensity here, the seafood pulled from these waters, the spice that defines this region’s identity. What emerges when these four hands share one stove remains genuinely unwritten. The dinner is not a parade of technique or a demonstration of ego; it is instead the unpredictable result of two kitchens that have learned to trust each other enough to risk something neither has planned.

The collaboration dinner takes place at ROYD, 95/1 Dibuk Road, Phuket Old Town, on 20 November 2026. The price per person is THB 3,590 plus service charge. Reservations may be made through restaurantroyd.com or by telephone at 065-554-2494.
