Valrhona has been producing chocolate in the small village of Tain L’Hermitage, France since 1922, building its reputation on technical precision and flavour elevation that commands the attention of the world’s finest pastry kitchens. The house now moves beyond the conventional chocolate bar format through a collaboration with Akoko, where Josh Root, group head pastry chef, has orchestrated an expression centred on aidan fruit, a fragrant aromatic ingredient from West Africa.
The chocolate sits beneath a thin shell of Nyangbo dark couverture, a Valrhona classic. Beneath lies a caramel infused with roasted aidan fruit, its singular flavour profile balanced against a smooth ganache made from Caramelia, the house’s signature blended chocolate. At the moment of service, a fragrant spray awakens the palate even before the first taste, transforming the bar into a multisensory encounter rather than a conventional confection.
The piece speaks to a particular philosophy: that chocolate, rendered with precision and intuition alike, need not stand alone. By introducing an aromatic dimension to what remains fundamentally a chocolate bar, Root and Valrhona have suggested that refinement lies not in complexity of construction but in the marriage of singular, memorable ingredients, each chosen for what it contributes to the whole.
