The convergence of two Michelin starred kitchens rarely occurs outside the realm of imagination, yet on 15 November, Chefs Solemann Haddad and Arslan Berdiev will orchestrate precisely such an encounter at Birch in DIFC. Rather than the conventional format in which two chefs alternate their signatures across a tasting menu, this evening dissolves the boundary between two restaurants entirely, yielding a ten course experience built from collaborative invention.

Haddad, whose formative years in Dubai to a French mother and Syrian father have shaped his approach, draws sustenance from the city’s regional ingredients and his own layered heritage. His restaurant Moonrise has held its Michelin star since 2023. Berdiev, by contrast, carries the influences of Turkmen ancestry and Central Asian roots, tempered by his travels across international kitchens. His restaurant Birch received its star recognition only recently, joining the 2026 Michelin Guide Dubai.

What binds them is not similarity but rather a shared curiosity about what food might reveal when stripped to its most honest expression. The menu unfolds across land and sea inspired amuse bouches, cold starters, and signature offerings from each kitchen: Moonrise’s grilled cheese, Birch’s beetroot course. Alongside these come newly created collaborative dishes, including a ravioli and joint dessert, that emerge only from this particular meeting of minds and hands. The evening concludes with Convergence, a final dessert that holds both chefs’ perspectives in suspension.

The ten course tasting menu costs AED 890 per person. Two seatings are offered, at 4pm and 8:30pm, on Sunday, 15 November 2026.
