The pastry kitchen at Singapore EDITION has turned its attention to the season’s most cherished confections, interpreting two classics through a refined lens that speaks to the hotel’s meticulous approach to hospitality. The Bûche de Noël, that venerable log of yuletide tradition, emerges dressed in pale pink sponge and piped cream, its elegant cylindrical form crowned with a hand painted sugar flower and candied stems. Beneath the surface lies a sophisticated composition: the delicate brightness of earl grey tea woven through layers of sponge, balanced by the soft earthiness of pistachio and the subtle tartness of raspberry.

Alongside it rests the Baba au Rhum, that Parisian treasure reimagined through the hotel’s own bar programme. The pastry chefs have worked with the mixology team to craft a house spiced rum, which generously saturates the yeast cake and lends it a warmth and complexity that elevates the pastry beyond its traditional rendering. The glossy amber glaze catches the light, and the whipped cream topping, studded with gold leaf, signals the care lavished on every element.

Both creations rest on black marble, their jewel tones catching the eye: the blushed pink of the Bûche against the deep caramel of the Baba. They are conceived as gifts as much as indulgences, as centrepieces for the gatherings that punctuate December and January. Pre orders are open for collection or delivery from 26 November, allowing time for these pastries to take their place at the heart of festive celebrations throughout Singapore.
