Nina Métayer, named the World’s Best Pastry Chef, has created the inaugural Christmas collection for Nina at The Ritz Carlton, Tokyo, drawing inspiration from a French musical that reimagines the Christmas narrative. The result is a quartet of desserts that balance theatrical playfulness with the precision of classical French pâtisserie.

La Surprise opens with ceremony: a delicate cocoa tuile dome conceals a wooden rocking horse within, a moment of discovery that transforms the eating experience into theatre. Beneath lies a mousse of refined complexity. A mistletoe inspired creation follows, its pale mousse wrapped in the festive iconography of winter tradition. The Bûche de Noël, that essential Christmas centrepiece, emerges in elegant form, its dark chocolate surface textured with deliberate roughness, crowned with fresh berries. A strawberry shortcake, its layers of sponge and cream anchored by a charming ceramic snowman perched on top, completes the collection with an almost whimsical restraint.

Each cake is designed for sharing, the kind of confection that belongs at a table where those closest to you gather. Métayer’s technical mastery shines not in ostentation but in the refinement of each layer, the precision of each piped detail, the calibration of sweetness and structure. The presentation itself becomes part of the gift: black ceramic plates, their surfaces catching the light, elevate these creations from the merely delicious to the genuinely memorable.

Reservations close on 10 December. Cakes are available for collection between 19 and 25 December at Nina, located within The Ritz Carlton, Tokyo. Reserve through the restaurant’s official channels.
