Fairmont Seoul’s pastry chefs have crafted two festive creations for December that translate the visual language of Christmas into flavour and form. Each cake sits upon a wooden board, its surface a quiet stage for the theatre of winter decoration: poinsettias in deep crimson, snowflakes pressed into pale velvet, gold leaf catching the light.

The Poinsettia Garden marries the hotel’s signature dark chocolate with a premium dark cherry jubilee, layered to reveal depth of flavour. Delicate notes of raspberry and matcha perfume the poinsettia decoration, an ornament of edible art. The Le Blanc Snow takes a different path: a mousse cake built on hibiscus and strawberry, softened by Moscato jelly and the brightness of raspberry. Snowflakes, rendered in precise detail, crown the surface in ivory, conjuring the crystalline geometry of winter itself.

Both cakes carry the restraint that defines luxury confectionery: the colour palette held to deep greens, reds and golds, the presentation unfussy but immaculate. This is decoration that speaks rather than shouts, refinement that comes from the hand of the maker, not from excess.
The cakes are available through December at The Atrium Lounge on the first floor. Whole cakes may be pre ordered from 16 November by telephone on +82 2-3395-6000.
