Hidden within a lush tropical garden in Saline, Tamarin St Barth has become one of the most iconic gastronomic and lifestyle destinations in Saint Barthélemy. An ancient Tamarind tree presides on the property, hence the restaurant name. What distinguishes the evening here is neither proximity to water nor cityscape, but rather a deliberate retreat into shadow and verdant quiet, where natural wood, soft lighting, elegant open air spaces, and refined tropical decor create one of the most spectacular dinner settings in Saint Barth.

The restaurant was redesigned by noted local architect Johannes Zingerle and decorated by Karine Bruneel. Natural wood, soft lighting, elegant open air spaces, and refined tropical decor create one of the most spectacular dinner settings in Saint Barth. Signature cocktails, refined lounge music, and sophisticated social energy create an atmosphere that perfectly reflects the tropical glamour of Saint Barth nightlife dining. The first image captures this precisely: a golden cocktail garnished with candied citrus, its surface catching the garden’s amber glow against darkness.

Chef Jérôme Lebeau’s menu moves between revisited French classics and an uninhibited twist on world cuisine, with seasonal products sourced in part from St Barth and the Caribbean region taking center stage. Fresh local tiradito, Saint Jacques carpaccio, smoked veal chop with a morel crust, foie gras mi cuit, lobster, and tender octopus are among the offerings designed to awaken every appetite. The roasted bird presented in the third image, golden, herb touched, ceremonial in its presentation, speaks to a kitchen that understands both refinement and generosity.

The restaurant opens daily from 6.30pm. During the peak season of November to April, the restaurant can be booked solid, so reservations are recommended well in advance. It is located on Route de Saline, 97133 St Barthélemy.
